Sister Oliver shared her recipe for the quiche:
Crustless
Spinach Quiche
Prep
time: 20 minutes Cook time:
30-40 minutes Serves: 6
Ingredients:
1
tablespoon vegetable oil
½
- ¾ cup onion, chopped (recipe called for 1 chopped onion, as made at brunch,
but I would decrease)
10oz
package frozen chopped spinach, thawed and drained
5
eggs, beaten
3
cups shredded Monterey Jack (recipe calls for Muenster, but it is very
expensive so I used Monterey)
¼
teaspoon salt
1/8 teaspoon ground
black pepper
Preheat
oven to 350. Lightly grease a 9” pie pan.
Heat
oil in a large skillet over medium-high heat. Add onions and cook, stirring
occasionally, until onions are soft. Stir in spinach and continue cooking until
excel moisture has evaporated.
In
a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and
stir to blend. Scoop into prepared pie pan.
Bake
in pre-heated oven until eggs have set, about 30-40 minutes. Let cool for 10
minutes before serving.
